Salmon and Asparagus Pasta Recipe

I'll be honest, prior to this recipe, if I ate seafood with pasta, it was likely going to be with shrimp. But this recipe changed the game. It's the perfect combination of creamy, crunchy, and ultimately delicious.

Ingredients: - 8 oz uncooked pasta (I used Rotini) - 1/2 bunch asparagus, chopped 1" - 1 lb salmon - Salt & pepper to taste - 1/4 teaspoon Italian seasoning - 1 Tbsp butter - 3 cloves garlic, minced - 1 Tbsp lemon juice - Zest from 1/2 lemon - 1/2 cup parmesan cheese, shredded or freshly grated - 1/3 cup milk - 1/3 cup Greek yogurt











Instructions: 1. Boil water for pasta. Cook al dente. 2. Trim asparagus and cut into 1" pieces. 3. Prep salmon with salt, pepper, and Italian seasoning. 4. Add butter to a skillet on medium-high heat. Cook salmon for 3-4 min per side and then set aside. 5. Add asparagus to the skillet for 2-3 minutes. Stir in garlic and cook for 30-60 sec. 6. Add lemon juice and lemon zest, Greek yogurt, milk, and parmesan to the pan. Stir thoroughly, then add salmon. Break up salmon into smaller pieces and cook until fully cooked through. 7. Combine sauce and salmon mixture with pasta. 8. Enjoy! Serves 4.
