Healthier Brownie Fruit Pizza

Just because the Fourth of July feasts are over, doesn't mean the summer desserts need to end too! Fruit pizza is a popular dish for summer gatherings, but if you're like me, chocolate is hard to resist. Why not combine two fan favorites into one healthier dessert?!

BROWNIE CRUST

1/4 cup Whole Wheat Flour

1/4 cup Unsweetened Cocoa Powder

1/2 tsp Baking Powder

1/2 tsp Pink Himalayan Salt

4 oz Baker's Bittersweet Chocolate (66% Cacao)

2 Tbsp unsalted butter or Coconut Oil

1/2 cup sugar

3/4 cup OIKOS Vanilla Non-Fat Greek Yogurt

1 tsp Vanilla Extract

2 eggs

ICING

3/4 cup OIKOS Vanilla Non-Fat Greek Yogurt

4 oz Hy-Vee 1/3 Less Fat Cream Cheese

2 Tbsp natural honey

TOPPINGS

2 Kiwis

5 Strawberries

12-15 Raspberries

12-15 Blackberries

INSTRUCTIONS

1. Preheat oven to 350 degrees and grease a 13 x 9 pan.

2. Mix whole wheat flour, unsweetened cocoa powder, baking powder, and salt in a small bowl.

3. Melt butter/coconut oil and bittersweet chocolate in the microwave for 30 secs, then stir. Repeat twice or until melted.

4. Add sugar, Greek yogurt, and vanilla to the chocolate and butter mixture. Stir in eggs one at a time until completely combined.

5. Add dry ingredients. Stir until consistency is even throughout.

6. Pour batter into prepared pan. Bake for 22-25 minutes.

7. While the brownies are baking, mix the Greek yogurt, cream cheese, and honey together until smooth.

8. Wash all fruit and pat dry with a paper towel.

9. Allow brownies to cool completely.

10. Spread icing on cooled brownies and decorate with fruit.
